We are a couple of chefs from the UK and Basque Country who, having worked for many years in the Pyrenees, have set up our own chalet with the aim of setting out a new space for mountain enthusiasts.


In creating Mendi our desire was to update the typical mountain holiday so often still overshadowed by the 80’s in terms of food, locations and ethics. We wanted to offer people a contemporary take on the mountain experience to include fresh, international cuisine, well sourced food and a low carbon footprint holiday. We aim to bring an ethical standard to skiing and high-quality food and service to climbing in a kind of responsible hedonism.

Maialen is from the Basque Country. She grew up in Pamplona and moved to Barcelona to study design. There she worked in L’Hortet, Barcelona’s oldest vegetarian restaurant and later became the chef at a retreat centre in the Catalan Pyrenees. She’s trained in Mindfulness Yoga and also teaches meditation.


Morgan is originally from the UK and trained as a chef in the Modern Pantry and Chiltern Firehouse, London. He has also worked on organic farms, for cheese makers and artisan bakers. He originally studied Sociology and believes in mixing food with politics.


We are a worker owned co-operative. This means that profits and decisions are shared fairly by members. Our desire is that this model can be expanded to create a network of similar enterprises that share our ethical framework and have comparable standards.
